Of 22 people who guessed the eatery which makes the pictured pizza in this week's contest, only one person made the correct guess--, 5960 W. Touhy Ave., Niles.

Steve and Maria Demet, two of the three co-owners (the third is Paul Cipolla) detailed all the care that goes into the Graziano Pizzette, pictured. It's the kind of care you'd expect from grads of a hospitality program at an Ivy League school--Steve and Maria attended the Hotel School at Cornell University in Ithaca, NY.

"We make everything from natural ingredients and we cook it to order," Steve Demet said.

"The breads we serve started out this morning as flour and water in our bakery," Steve Demet said. "Our soups and salad dressings are made fresh here--the desserts, too. We don't use any institutional ingredients."

On the Graziano pizzette, the pizza dough is made fresh and the sauce is made from San Marzano tomatoes. in Niles custom-makes the Italian sausage, according to Steve Demet's recipe. And it's finished with red, green and yellow peppers and fresh basil.

It's baked in a 900-degree wood-burning brick oven, fueled by apple, cherry and oak hardwoods--hence the "Graziano's Brick Oven Pizza" moniker.

A rectangular specialty pizza, offered as a daily special, is also shown in the photos.

Now about those winners. Steve Demet said he'd give a free pizza to everyone who correctly guessed the pictured pizza was from Graziano's. One person, James C. Efston, got it right. James, please call Steve Demet or Paul Cipolla at Graziano's to claim your free pizza.

Everyone else, please play Guess the Food again next week!
